Easy Hummus

Hummus is both really nutritious and wildly over-priced in the stores. Here's a quick recipe for tasty hummus that makes for a great dip or sandwich filling.


Equipment required :


Food processor


Ingredients


  • 2 cups (20fluid oz) cooked or canned chickpeas - drained (1 can - 16fl oz is fine too)

  • 5-7 tbsp of tahini

  • 2-5 tsp lemon juice (concentrate)

  • Olive oil (6 tbsp+)

  • 1 tbsp finely minced garlic (or paste)

  • salt


Toss the chickpeas and the lower-end amount of the other ingredients into the food processor (aside from the salt) and blend on high. Check the consistency every 20 seconds or so (I like it sort of chunky for sandwiches. If you want it creamier, add more oil a tablespoon at a time as it blends until you reach your goa) and stop before it gets as fine as you want.


Taste and adjust salt and lemon juice to your preference - blending in short bursts until you hit your desired consistency.


Freezes well. If served as a dip, sprinkle paprika (smoked if you have it) on top and serve with veggies, chips, pickles, what-have-you.


Notes : if you oversalt, add a little more lemon juice and tahini. also, garlic can always be added, start on the lower end unless you're a real garlic fan (it me!).


Variations :


  • For a spicy take, add sriracha to taste.

  • Ground roasted pine nuts are nice addition

  • For a nice tang, a couple of roasted red peppers add a new dimension

  • Cumin really adds a deep flavour to it, but I recommend you ease up on the garlic if you try that
